Nothing is more enjoyable than a delicious breakfast, and one of our favorite activity is to prepare delicious food for the people we love. We had guests today at breakfast, so we chose to prepare something special. We have to admit that every time we have guests we are a little bit nervous because we want everything to be perfect.
Breakfast is our favorite part of the day, there are so many choices and options, it’s hard to decide. But we end up making this lovely Dutch Baby Pancake topped with eggs, bacon and avocado. A Dutch Baby is kind of a cross between an omelet and a giant pancake. Everything is baked together in a cast iron skillet for a deliciously puffy pleasure! Cheesy and extraordinarily tasty, this dutch baby was the right choice. You can make it sweet or salty and whatever your choice, believe us is the right one.
The key to Dutch Baby success? You must not open the oven during the first 15 minutes of baking. We know it’s so hard to resist checking on your pancake. BUT if you open the oven during these first 15 minutes you run the risk of deflating the pancake. So, no peeking!
For the Dutch Baby
- 4 tablespoons butter
- 4 large eggs, at room temperature
- 2/3 cups whole milk, at room temperature
- 2/3 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 3 tablespoons grated parmesan cheese
- 2 eggs
- 4 slices bacon
- avocado (sliced)
- chili flakes
- salt to taste
Step 1: Preheat the oven to 200°C. Place 2 tablespoons butter in a cast iron skillet. Place the skillet in the center of the oven for 5 minutes.
Step 2: In a large bowl combine the eggs, milk, flour, salt, parmesan cheese and 2 tablespoons melted butter. Mix until the batter is smooth. Make sure no large clumps of flour remain.
Step 3: Remove the hot skillet from the oven and pour the batter into the skillet. Place the skillet in the center of the oven and bake for 20-25 minutes or until the pancake is fully puffed and browned on top. DO NOT open the oven during the first 15 minutes of cooking or you might deflate your pancake.
Step 4: Meanwhile, prepare the eggs and bacon. You can use any kind of toppings you want: herbs, mozzarella, prosciutto.
Step 5: Remove the Dutch Baby from the oven and top with a small pat of butter. Finish with eggs, bacon and avocado. Sprinkle some chili flakes and serve.
