Summer comfort in a bowl — Creamy Sweet Corn Soup is fresh and soul warming. Tasty and impressive —the perfect solution to a quick get together brunch. This recipe is a delicious, make ahead soup that’s loaded with sweet corn flavor which can be served as an appetizer, for lunch or for dinner!

- 3 cups sweet canned corn
- 2 tablespoons of butter
- 1/2 cup white onion finely chopped
- 2 cloves garlic diced
- 2 cups chicken stock/ vegetable stock
- 2 cups milk
- 1 tablespoons all-purpose flour
- Salt and pepper to taste

Step 1: Melt the butter in a saucepan over medium-low heat. Add onion and garlic and cook. Stir to avoid sticking to the bottom until the onion and garlic are softened.
Step 2: Add the corn and the 2 cups of chicken stock or vegetable stock, bring to a simmer for 15 minutes, or until corn is tender.
Step 3: While the soup simmers, mix the tablespoons of all-purpose flour with the 2 cups of milk. Mix well to avoid any lumps.
Step 4: Into the blender and add the cooked corn with the stock and process the soup until smooth.
Step 5: Return pureed soup to the saucepan add the mixture of flour and milk and simmer over medium heat until the soup thickens, about five more minutes. Stir soup to avoid sticking to the pan. It should have a thick consistency.
Step 6: Season with salt and pepper to taste and add the croutons.
