Almost everyone loves eggs. They can be cooked so many different ways and eaten for breakfast, lunch or even dinner. Scrambled, poached or maybe a little coddled… there are thousands of ways to enjoy eggs in your life.

The fact is, if you open your fridge on the weekends, the eggs sit waiting in their carton for any number of breakfast dishes including our very favourites…greens and feta omelette.

We are crazy about this breakfast which is loaded with lots of asparagus and spinach. Hope you enjoy this egg’mazing breakfast because we assure you that it’s delicious.


  • 4 eggs
  • salt and pepper
  • 1 bunch asparagus ( shaved with a peeler)
  • 1 cup fresh spinach
  • 100 g butter
  • 100 g feta
  • 2 cloves garlic (minced)
  • arugula to serve


Step 1: Place the eggs, salt and pepper in a large bowl and whisk to combine. 

Step 2: Over medium heat place a non-stick frying pans. Add butter, garlic asparagus, salt and pepper and cook for a few minutes.

Step 3: Add the egg mixture and cook for 3 minutes or until puffed and golden on the bottom. Top with spinach and feta and carefully fold over to enclose.

Step 4: Sprinkle with pepper and arugula and serve immediately.
