It’s safe to say that everybody has eaten at least once in their life a sandwich — it’s a classic and there is literally no end to the fillings that are possible for sandwiches: veggies, cheese, meat or jams. The equation is open to endless interpretations like cuban, grilled cheese, doner kebab, panini or naan, but they all have something in common, they all include slices of bread with other ingredients between.

We have to admit that for us, sandwiches are an addiction but also our salvation on busy days when we don’t have time to cook. Also, you can’t eat the same sandwich twice in a row, the options are unlimited depending on season or weather, so the chances of getting bored with this kind of food is zero.

A few days ago we made some beautiful and fluffy english muffins perfect for breakfast like eggs Benedict, or toasts. Because we still have some english muffins left, spring is here and markets are full of fresh vegetables, we decided to take advantage and make some old – fashioned sandwiches filled with fresh veggies which will blow your mind and your stomach.
