It’s so hot outside at the moment and what I’m craving is cold, smooth and creamy ice cream. Looking for a new ice cream flavor? What about homemade red currant ice cream? This refreshing Red Currant Ice Cream is a wonderful treat not only in summer.
This version is made with only four ingredients and can be made with fresh or frozen black currant. I like texture in my foods, so I cooked the red currant berries until some of them were just starting to burst. You can definitely cook them longer, mash and strain out the skins and seeds, if you want a very smooth ice cream.
- 1½ cup blackcurrants
- ½ cup granulated sugar
- 250ml heavy cream
- 600 ml greek yogurt
Step 1: In a small sauce pan, bring blackcurrants and sugar to a boil. Reduce the heat and simmer until the sugar has dissolved completely. Let the mixture cool down completely.
Step 2: In a large bowl whip heavy cream until stiff. Add greek yogurt and mix well. Stir in the cooled blackcurrant mixture. Pour the into a freezer friendly container and throw in fresh blackcurrants. Stir them lightly and freeze for at least 4 hours before serving.
