INGREDIENTS (for 2 servings)
- 200 g spaghetti
- 1 teaspoon salt
- 4 tablespoons homemade basil pesto
- grated parmesan cheese
- fresh burrata
- 1/2 cup water pasta reserved
Step 1: In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/ 2 cup pasta water.
Step 2: In a large skillet over medium heat, add spaghetti, pesto and water pasta, then toss pesto and pasta together until incorporated.
Step 3: Turn the heat off, add parmesan cheese and toss for another 2 minutes until the pasta becomes creamy.
Step 4: Place the hot spaghetti on a plate then place the burrata in the center and gently pull apart the balls. Sprinkle some pine nuts and serve.
