Who doesn’t love eggs? Boiled, poached or fried, eggs are a delight and the right choice whether it’s breakfast, lunch or dinner. We recently discovered the Turkish eggs recipe or well- known as Çilbir and we have to say that we fell in love irremediably. Forget about all the eggs cooked so far because Turkish eggs are in the house and you will die of pleasure. A simple but powerfully flavorful recipe that will make you become addictive. I think we’ve become obsessed with this recipe because for a week we ate only Turkish eggs.


  • 4 eggs for poaching
  • 6 slices bread

For the Herbed Yogurt

  • 250g Greek yogurt
  • 1 clove of garlic, grated
  • 1/3 cup finely chopped dill
  • 1/2 teaspoon of salt
  • freshly ground black pepper

For the Chili Butter

  • 100g butter
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon paprika
  • a pinch ground cumin

For the Chimichurri

  • 1/2 cup chopped parsley
  • 1/3 cup chopped dill
  • 1 tablespoon chopped mint
  •  1 clove garlic
  • 1 tablespoon fresh thyme
  • 2 fillets of anchovies soaked in olive oil
  • 1 tablespoon pickled jalapeños
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • salt to taste


The herbed yogurt

In a large bowl mix Greek yogurt, dill, garlic, salt and pepper. Cover and place it into the fridge for 1 hour.

The Chili Butter

In a small pot, on medium heat, add butter, chili flakes, paprika and cumin. Once the butter has melted, let cook for another min.  Turn off the heat and set aside.  Warm up over low heat before using.

The Chimichurri

This delicious salsa verde can be made in a food processor or you can use a mortar. We used the “hard way” — the mortar.

Step 1: Grind the garlic, anchovy fillets and pickled jalapeños together until become paste-like consistency .

Step 2: Then add the fresh thyme, mint and grind again until they almost disappear into the paste.  Add the fresh parsley leaves and dilll and grind again until incorporated.  If you are using a food-processor, you can do all this at once.  

Step 3: Add the the extra virgin olive oil, lemon juice, freshly ground black pepper and mix the sauce to combine the ingredients together.  Adjust the seasoning with some salt.  It should look like a pesto sauce.
